Recording Lag

So my recordings were never that laggy (same settings same setup same everything) but in the last 2 weeks my obs studio has gone laggy when running or recording, my specs are: gtx 1080, ryzen 5 3600 and 16GB ddr4 3000mz ram. I will attach an example recording. Im also using a 1tb m.2 nvme ssd which runs fine (this is what my videos are saving to) my drivers are up to date. I will also attach a screenshot of my settings. The game i am playing is Roblox with a livesplit speedrun timer. Can someone please tell me what is going on. (The video isnt THAT laggy but you can definitely see where the frame drops are happening. I want my videos to be high quality consistent 60 fps.) Can someone recommend me some good quality settings for my setup if the settings are the problem.
